Store it right

  • Keep in the carton on a shelf, not the door, so they hold a steady temperature.
  • Don't wash eggs before storing; it strips the protective bloom.

Signs it has gone off

  • Float test: an egg that floats upright in water is old — but confirm by smell.
  • Any sulfur smell when cracked, at all.
  • Pink, iridescent, or green whites.

Never taste food to test it — a small bite is enough to make you ill.
